Welcome to Nixtamal, a restaurant experience created by Lyne Tremblay and Jorge Sanchez Martinez, a Quebec–Latin couple who dreamed of introducing authentic Mexican cuisine in its purest tradition. That said, Nixtamal also features a few delicious Charlevoix terroir touches. A native of Cancún, Jorge has explored the kitchens of various countries, from Argentina to Japan, before making Baie-Saint-Paul his home base. How fortunate we are to now enjoy dining at his table!
